Trying to increase your fibre intake? Try legumes in small amounts in soups

SPICY CARROT AND LENTIL SOUP

2 tbsp Madras Curry Paste

1 tablespoon olive oil

1 onion,diced

1 inch peice of ginger, peeled and finely chopped

1 tablespoon of curry leaves

600gm carrots, peeled and diced

3/4 cup of red lentils

1 litre of stock

1 tin of diced tomatoes

  • heat oil in a heavy base saucepan
  • add onion and LK Paste and cook 2 minutes
  • toss in curry leaves and cook for a minute till aromatic
  • ¬†Add the carrots , stock, lentils and tomatoes and cook for 30 minutes
  • serve with yoghurt if you fancy
